Utilization of magnesium from leafy vegetables and cereals: Effect of incorporating skim milk powder in the diets

The bioavailability of magnesium in the presence of other substances was investigated in young rats, using experimental diets based on cereals (millet, rice, wheat) and leafy vegetables (gram, fenugreek, mustard, spinach and radish leaves), with and without the addition of skim milk powder. The millet and leafy vegetables were rich in magnesium, which was well utilized by rats with the exception of that in fenugreek. Addition of skim milk powder enhanced magnesium utilization from millet, fenugreek, rice, gram, and spinach. The oxalate content of the leafy vegetables did not seem to reduce the bioavailability of magnesium.
