The preparation of pork dishes in countries around the world reflects ingenuity and resourcefulness. Sauces, seasonings and cooking techniques which are popular in Hungary, Austria, France, Italy, and the Philippines are described. A recipe for Szekely Gulyas is featured. This Hungarian style pork stew teams pork with sauerkraut, paprika, tarragon, caraway, and parsley. To these are added white wine and the final Hungarian touch--sour cream. The gourmet stew is pictured.
