Crystalline fructose, a free-flowing granulated substance similar to sucrose, has long been recognized for its sweetness and, recently, for its positive effect on serum glucose and insulin responses in some persons with diabetes (1-6). If acceptable products can be developed using crystalline fructose, foodservice personnel serving the elderly may be able to use fructose for both clients with diabetes and other clients without the need for additional food preparation. The elderly in institutions often need extra energy. The use of crystalline fructose as a sweetener, along with nutrient-dense foods, may add energy, satisfy the desire for sweet foods, and maintain a stable blood sugar level. The acceptance and consumption of fructose-sweetened menu items among the institutionalized elderly was compared with acceptance and consumption of the sucrose-sweetened or low-calorie items normally served.
