Solubility of calcium soaps of long-chain fatty acids in simulated intestinal environment

Solubility data were calculated for calcium (Ca) soaps of 12-C18 long-chain radio-labeled saturated and oleic fatty acids in simulated human intestinal contents. Individual soaps were incubated for 1 hour at 37 degrees Centigrade in a 140 mM NaCl solution containing 10 mM bile salts with 1.45 mM lecithin at various pHs ranging from pH 5.0-6.8. Free fatty acid was 13 times more soluble than the Ca soap, and there was 6.5 times more free fatty acid present in solution than was present in the respective Ca soap. Ca soap solubility correlated negatively with solution acidity, carbon chain length, and fatty acid saturation. A multilinear regression equation for soap solubility is reported. (wz)
