Mineral content of legumes as related to nutrition labeling

Results of research to determine the mineral element content of raw mature dry legumes are discussed and are compared to nutrition labelling specifications. Relationships between nitrogen and nine mineral elements were investigated for both raw and cooked legumes in an attempt to determine whether, for legumes as a class, the content of any of the minerals could be predicted from the nitrogen content. Meeting nutritional labelling requirements for several minerals in legumes, as purchased in the retail market, should not be a problem to the processor. Tables are included.
