On the effectiveness of restaurant inspection frequencies
1978
Kaplan, O. Benjamin
Statistical data is provided on the effectiveness of restaurant inspection frequencies using a binomial expansion formula which considers the probability of an unsafe condition in a restaurant, the frequency of inspections, and the number of inspections that detect an unsafe condition. The results show that inspections will not adequately indicate unsafe or unclean conditions (in regard to food poisoning) due to limitations in inspection procedures. Inspections are useful in deterring unsanitary behavior by restaurant personnel, in the collection of information related to community health problems, and in disseminating health information. Inspection activity merits improvement not abandonment.
