Protein value of Candida tropicalis ATCC 1369 and of corn residue used in the production of the yeast

The increase in the nutritive value of corn mixed with yeast is well documented. Mixtures produce better amino acid balance and higher PER. Since yeasts can utilize the carbohydrate of corn residues from acid-hydrolyzed corn as a substrate, the nutrient values of corn meal, corn residue and yeast were measured by total amino acids and by available lysine, methionine, and tryptophan. Male rats were fed various combinations of corn, the yeast C. tropicalis, and corn residue, as well as mixtures enriched with limiting amino acids. The data indicate that corn is a good substrate for the production of yeasts to be used as a food for man; the nutritional value of corn residue was low, however, unless supplemented with lysine or tryptophan. Enriched feeds produced better growth in test animals than nonenriched feeds. It is suggested that other yeast strains which are higher in methionine be studied.
