Nutrient intake of low-income, black families in southwestern Mississippi

A one-week dietary intake study of 250 poor black families was conducted to determine if nutritional deficiencies were common among the very poor. Standard food composition tables were used to calculate nutrient intake. Nutritional adequacy was evaluated by comparing the data with Recommended Dietary Allowances, the Ten-State Nutrition Survey and with the Health and Nutrition Examination Survey (HANES). Mean intakes of protein, vitamin A, thiamin, riboflavin and vitamin C for all subjects were above RDAs; mean intakes of energy, calcium, iron and niacin were below recommended levels. More protein and less calcium was consumed than other nutrients. A substantial number of individuals had low nutrient intake. Adolescents had the poorest diets for all nutrients.
