Instant coffee comprises one-third of all coffee sold in the United States. 39 widely-sold instant coffees, 15 of which are marketed by General Foods, Procter and Gamble, and Nestle, were tested by Consumer Union for flavor, body, appearance, aroma, and caffeine content. Rated highest were the freeze-dried types, which are subjected to less heat during processing than the regular types. Cheap beans were cited as the reason for the undersirable taste and aroma of grain found in many instant coffees. One-third of all instant coffee sold is decaffeinated; it is slightly more expensive than nondecaffeinated. Regular instant is the cheapest; freeze-dried is the most expensive. Recommendations are made, and ratings listed.
