The relationship between salt intake and high blood pressure is explored and tips for reducing salt consumption are offered. Excessive amounts of dietary sodium affect the blood pressure levels of approximately 20% of the American population. However, the exact mechanism by which dietary sodium alters blood pressure is unclear. Risk factors for the development of hypertension include: positive family history of hypertension, race (blacks are twice as likely as whites to develop hypertension), obesity, and age (blood pressure rises with obesity and age). Lower salt or sodium intakes are recommended generally as a precautionary measure. The theory behind the usefulness of low sodium diets is discussed. The sodium content of some prepared foods is highlighted. (kbc)
