New findings on palm oil

Animal and human experiments indicate that palm oil, although it contains about 50% palmitic acid, does not behave as a saturated oil. This may be associated with some peculiar triglyceride species present in palm oil and/or to the composition of its non-triglyceride fraction. Whatever the reasons for anomalous effects of palm oil on blood lipids, thrombosis, and atherosclerosis, its importance as a nutritional component stands in sharp contrast to the limited knowledge of its physiologic effects and impact on the cardiovascular risk.
