Drying behaviour of ginger (CV. mahim)

The drying characteristics of ginger were studied by employing open air sun drying, solar cabinet drying and mechanical tray drying (65° C) methods. The samples were placed uniformly in a single layer and weight of samples was recorded at an interval of 0.5 h until equilibrium moisture content was reached. Drying time required for open air sun drying for peeled treated whole, peeled untreated sliced, peeled untreated whole, un peeled untreated sliced and un peeled untreated whole observed was 30.0, 23.5, 31.0, 26.5 and 50.0 h respectively. Whereas in case of solar cabinet drying and mechanical drying it was 12.0, 10.5, 8.0, 11.0, 30.5 h and 12.5, 5.5, 17.5, 14.0 and 29.5 h respectively. The mathematical models for describing the drying behavior of ginger were developed in which drying constant varied between 0.0349 to 1.1822 h⁻¹. The minimum drying time and maximum value of drying constant was observed in case of mechanical tray drying for peeled untreated sliced ginger samples. The moisture content at any desired time interval can be predicted with the help of mathematical model if value of initial and equilibrium moisture content is known.
