The aim of this study is to propose an alternative to synthetic antifungal chemotherapy while promoting an Atlantic-Mediterranean, endemic, and economically important cork oak species of Mâamora in Morocco. The leaves and bark of cork oak were extracted with methanol by means of the Soxhlet. Dilutions of six methanolic extracts obtained were prepared to obtain final concentrations ranging from 100 to 1.65 mg/ml according to a geometric connection at the rate of 1/2. The performance of tests was conducted using the technique of agar dilution for determining the MIC for both strains coupled with micro-broth dilution parameters for the characterization of fungal extracts on the growth of Candida albicans. A summary phytochemical analysis was performed on the basis of test characteristic color to highlight the major chemical groups. The results show that both extracts have activity against fungi studied. The determination of MICs showed degrees of activity in a dose-response relationship. However, the best performance is obtained in the presence of the methanol extract of the bark with MICs ranging between 12.5 and 50 mg/ml for Candida albicans and Trichophyton rubrum. The results of the phytochemical study noted the presence of phenolic compounds including saponins, flavonoids, and tannins and absence of alkaloids in both extracts. Of the two extracts of cork oak studied, the methanol extract of the bark has the best antifungal activity, especially on Candida albicans.
