Methods used for the determination of dietary fiber in foods are reviewed and some of the physiological effects of dietary fiber are outlined. Guidelines for interpreting good dietary fiber values in light of their physiological role are discussed. Topics include: analytical methods; fractionation methods; physiological effects associated with fiber consumption; cholesterol reduction; cereal, fruit, and vegetable sources of dietary fiber; and dietary fiber consumption trends in Great Britain. the fiber content of various foods is summarized in tabular form.
