Chemical characterization by liquid chromatography of moro blood orange juices

More variety blood orange juices from California and Florida were prepared in the pilot plant. Liquid chromatographic methodology was used for the separation, identification, and quantitation of sugars, nonvolatile acids, methoxylated flavones, flavanone glycosides, carotenes, and anthocyanidins. A photodiode array detector was employed to characterize the spectral properties of each class of compound. The chemical compositional data, with the exception of those on anthocyanin pigments, are consistent with those on other common sweet oranges. California-grown blood oranges generally have a distinctive deeper pigmentation than do those grown in Florida.
