School meals as an education resource

School meal service in the United Kingdom provides the kind of food which students want at a competitive price; defined nutritional standards are no longer required. Recent surveys showed that children did not always make wise choices at lunch; children selected an unvaried diet that was high in fat content. Persons involved with children's eating habits should work together to provide a varied diet that will encourage good eating patterns. A nutrition education project has been established which uses colors to represent the nutrients most lacking in a teenager's diet (protein, iron, calcium, and vitamins A and B). Foods are marked with the appropriate color as they are presented in the cafeteria; incentives are given for meals containing all 4 colors. (rkm)
