Productivity in foodservice systems in fourteen nursing homes

Analysis of labor time in 14 nursing homes (nongovernment, approximately 100 beds at 80% occupancy, skilled nursing and center foodservice) provides information on productivity which may be useful as a comparison tool in trying to increase efficiency as a method of cost control. Data were collected by activity sampling on week days for direct work, such as processing, service, transportation and cleaning; indirect work, such as instruction and appraisal; and delay time, such as forced delay and idleness. It was found that productivity increased with number of meals served, and that this was a better measure of output than bed capacity. Mean total minutes per meal varied from 7 to 19, with 4 of the homes being significantly different from the other 10 in direct work activities.
