The cholesterol/saturated-fat index: an indication of the hypercholesterolaemic and atherogenic potential of food

A cholesterol/saturated-fat index (CSI) was calculated, based on a modification of a regression equation developed from metabolic studies aimed at reducing blood lipid levels. This index is shown to have a high correlation with ischemic heart disease mortality in numerous countries. Index values and caloric content are computed for a wide number of foods of the Western diet and for 3 diets designed to prevent coronary heart disease. Index values and kcal levels also are shown for selected low-fat and traditional recipes. It is argued that low CSI values indicate a low saturated fat and cholesterol content in foods, and a low atherogenic risk. This index can be used to rapidly compare different foods and recipes and for evaluating daily individual intakes.(wz)
