Technology transfer between the West and the developing countries may be faster than we realize. Soaking and hand removal of soybean hulls was standard in 1959. In 1965, a pilot study described a method of milling to remove soybean hulls; by 1974, an Indonesian factory has adapted a traditional Chinese hand-operated stone mill to this technique. Fermentation techniques for tempe production were still rather primitive in Indonesia in 1959. By 1974, a technique using flat wooden trays covered with perforated plastic sheeting was developed; this technique has apparently been adapted from a study describing the use of metal trays covered with perforated waxed paper. A 1964 study described the use of plastic bags for tempe fermentation; by 1974, Indonesians were using this technique. It would appear that circulation of scientific information between the Indonesian and U.S. scientific communities has encouraged improvement and modification of traditional technology.
