Protein from plant sources is incompletely digested, and the indigestible fraction represents a significant percentage of the total protein. The indigestible protein is not wholly of cell wall nature, and should be considered part of the dietary fiber composite. This protein, therefore, would be involved in binding and play an active role in physiological effects. Because of the active chemical nature of protein as compared to relatively inert cellulose and hemicellulose, indigestible protein could be important in the physiological effects of dietary fiber in the lower digestive tract.
