Recommended storage and thawing procedures for turkey are presented. Turkey comes in many newer forms (e.g., cutlets, wings) which can reduce cooking and labor time. Store turkey in its shipping containers, hard frozen at 0 degrees F. Thaw turkeys in the refrigerator (preferred) or in a tightly-sealed plastic bag in cold water (both keep the turkey's surface below 55 degrees F and prevent bacterial growth). Some turkey products (diced portions) can be used without thawing. Ten tips are offered to ensure quality turkey when served. (kbc)
