English. The main global trends in meat and meat products consumption are analyzed based on an integrated approach. The work purpose is to reveal the main global vectors of consumer preferences, to formulate risks and opportunities for the development of demand in relation to the consumption of meat and meat products. The FAO data on exports and imports of meat and meat products for 2020 and 2021 were analyzed. The main meat exporting countries are the USA, Brazil, Spain, Germany, and Canada. Each of them supplied from 2 to 8 million t of meat and meat products to the market. Leading importing countries – China, Chile, Japan, Germany, the USA – imported from 1.7 to 9.7 million t. The transformation of the requirements imposed by the consumer in relation to meat and meat products has been revealed. In industrialized countries (USA, Canada, a number of European Union countries, Japan) consumers become more focused on the image of an enterprise, the availability of information about production conditions, and the cooking convenience of the product. Consumers are aware of the impact of meat production on the environmental situation and climate change in some regions of the world, and they may refuse to buy if the production of any type of meat in a particular region damages the environment. In Africa countries and some Asian countries, where the amount of meat consumed per capita is relatively small because of the low solvency of the population, the main selection criteria are cost and appearance of the product. The global economic crisis and COVID-19 pandemic also affected the consumption level of meat and meat products. The demand for meat in developed countries showed a downward trend, but interest in products of "healthy food" category increased. A slight decrease in demand from China and an increase in demand in Asia and the Middle East are predicted. Demand trends will be determined by the level of income, education and consumer awareness. The publicity of productions will increase, and the quality of products will increase owing to the introduction of new technologies. The artificial meat market will develop.

Цель работы - определить основные мировые векторы развития потребительских предпочтений, сформулировать риски и возможности развития спроса в отношении потребления мяса и мясных изделий. Анализировали данные ФАО по экспорту и импорту мяса и мясных изделий за 2020 и 2021 гг. Основные страны-экпортеры – США, Бразилия, Испания, ФРГ, Канада. Каждая из них поставляла на рынок от 2 до 8 млн т мяса и мясных изделий. Лидирующие страны-импортеры – Китай, Чили, Япония, ФРГ, США – ввозили от 1,7 до 9,7 млн т. Выявлена трансформация требований, предъявляемых потребителем в отношении мяса и мясных изделий. В промышленно развитых странах (США, Канада, ряд стран Европейского Союза, Япония) потребители стали больше ориентироваться на имидж предприятия, доступность информации об условиях производства, удобство приготовления продукта. Потребители знают о влиянии производства мяса на экологическую ситуацию и изменение климата в ряде регионов мира, и могут отказаться от покупки, если производство какого-либо вида мяса в конкретном регионе наносит ущерб окружающей среде. В странах Африки и ряде стран Азии, где количество потребляемого мяса на душу населения относительно мало из-за низкой платежеспособности населения, основными критериями выбора являются стоимость и внешний вид продукта. Мировой экономический кризис и пандемия COVID-19 также повлияли на уровень потребления мяса и мясных изделий. Спрос на мясо в развитых странах показал тенденцию к снижению, но возрос интерес к продуктам категории «здоровое питание». Прогнозируется некоторое снижение спроса со стороны Китая и увеличение спроса в странах Азии и Ближнего Востока. Тенденции развития спроса будут определяться уровнем дохода, образования и информированности потребителей. Возрастет открытость производств, за счет внедрения новых технологий повысится качество продукции. Будет развиваться рынок искусственного мяса.
