Research of technological properties of corn groats

The paper presents research on the technological properties of maize kernels. We aimed to follow the extraction of groats when milling the maize hybrid "Porumbeni-351" of the subspecies Zea Mays Indurata, the protein content, and the technological properties of the groats obtained by boiling degree and boiling volume increase. Analyzing the results obtained from the research, it can be concluded that the technological properties of maize bran can be perfectly correlated with the content of the glassy layer in the endosperm of the grain and are directly influenced by the particle size.
