CURRENT STRUCTURE OF THE FLOUR AND BAKERY PRODUCTS INDUSTRY IN TURKEY AND THEIR PLACE IN THE FOOD INDUSTRY

In the study; It aims to examine the current situation and development of the flour and bakery products industry and the problems faced by the industry. Flour and bakery products industry, which is in a wide product group; It has an important position in Turkey in terms of the number of existing enterprises, production, consumption, employment and contribution to the economy, and also has an important share in the food industry. In the study, reports and statistical information about the flour and bakery products industry were used. In the flour and bakery products manufacturing industry, 39 thousand enterprises operate with approximately 239 thousand employees, with a turnover of 106 billion TL and an added value of 17 billion TL. It has been stated that there are problems in this sector such as the raw material cannot be supplied with the same quality and standard, qualified workforce cannot be found, small business structures and under the influence of the informal economy, it has to struggle against unfair competition, and the costs for production constantly increase.
