The composition of spices - the main component affecting the flavor of cooked sausages.

Cooked sausages are in great demand in the diet of people living in almost all countries of the world, the main component affecting the quality of which is a set of spices. The specific feature of the consumption of the latter is that it is added to the main product (meat) in the form of a composition. The extensive use of food concentrates in the food of the population, the army, special expeditions and tourists required and requires more and more classical (tropical) spices and is associated with high currency expenditures. The shortage and high cost of classical spices led to the development of a composition of spices for the purpose based on local spice-aromatic raw materials. Tab. 1, Ref. 3.
