The main product obtained from bee is honey. It was found that the mass fraction of water in polyforal honey investigated in 2010 is on average of 17.43%; invert sugar - 91.13% sucrose - 2.32% diastase index - 17.25 un. Gote, Oximetilfurfurol content (HMF) - 5.16 mg / kg, total acidity - 1.83 cm3 NaOH solution in (mil equivalents) per 100 g honey, ash - 0.087%, substances insoluble in water - absence. It was determined that the presence of toxic elements in polyfloral honey are on average: lead and cadmium less than - 0.011 mg / kg arsenic - 0.01 mg / kg, radionuclides: cesium-137 to 3.0 Bq / kg, strontium-90 - 1,373 Bq / kg, hexachlorocyclohexane α, β, γ - 0.001 mg / kg; DDT and metabolites - 0.005 mg / kg.
