Efecto de la irradiación gamma sobre la calidad en arándanos frescos (variedad Emerald)

Gamma irradiation technology could be a promising alternative for the preservation of fresh blueberries since it does not produce significant deterioration in their quality. The objective of this work was to evaluate the effect of gamma irradiation technology on the quality of fresh Emerald variety blueberries. It consisted of subjecting 50 g of sample to a dose range of 0.6 kGy, 1.2 kGy and 1.8 kGy. The irradiation of the samples was carried out at the Ezeiza Atomic Center of the National Atomic Energy Commission (CNEA) in the Gamma Irradiation Plant, whose source is Cobalt 60 (820 kCi). Treatments were carried out in triplicate and at room temperature. For each target dose, the average dose absorbed by the samples was determined by dosimetry, resulting in 0.72±0.03 kGy, 1.46±0.10 kGy and 2.16±0.11 kGy. For the quality analysis, the optical properties (luminosity L*, color intensity C* and hue h) and mechanical properties (firmness and elasticity), phenolic content, antioxidant capacity (ABTS and DPPH methods) and enzymatic activity were determined. The results of the statistical analysis showed that the optical properties, total phenolic content and antioxidant capacity were not significantly affected (p>0.05) throughout the applied dose range. In the case of mechanical properties, the statistical analysis determined that the dose range applied had a significant effect (p<0.05) on them, observing a decreasing trend in the firmness and elasticity of the skin as the dose increased. The softening effect induced by gamma irradiation could be attributed to changes in the cell wall structure and solubility of pectin, mainly protopectin. Regarding the polyphenoloxidase enzyme, a decreasing trend in its activity could be observed, with those samples treated with the highest absorbed dose (2.16±0.11 kGy) being significantly different (p<0.05) from the control. This could be attributed to the fact that ionizing radiation can cause changes in the structural conformation of the enzyme or modifications in the active sites, which affects its activity. In conclusion, in this study we observed that the application of gamma irradiation technology could have a negative impact on the texture of blueberries. On the other hand, the fact that the enzymatic activity of polyphenoloxidase decreases means that the quality of the blueberry can be preserved for longer. // Resumen: La tecnología de irradiación gamma podría ser una alternativa prometedora para la preservación de arándanos frescos ya que no produce deterioro importante sobre la calidad de los mismos. El objetivo del presente trabajo fue evaluar el efecto de la tecnología de irradiación gamma sobre la calidad de arándanos frescos variedad Emerald. El mismo consistió en someter 50 g de uestra a un rango de dosis de 0.6 kGy, 1.2 kGy y 1.8 kGy. La irradiación de las muestras se realizó en el Centro Atómico Ezeiza de la Comisión Nacional de Energía Atómica (CNEA) en la Planta de Irradiación Gamma, cuya fuente es Cobalto 60 (820 kCi). Los ratamientos se realizaron por triplicado y a temperatura ambiente. Para cada dosis objetivo se determinó la dosis promedio absorbida por las muestras mediante dosimetría, dando como resultado 0.72±0.03 kGy, 1.46±0.10 kGy y 2.16±0.11 kGy. Para el análisis de calidad, se determinaron las propiedades ópticas (luminosidad L*, intensidad de color C* y tonalidad h) y mecánicas (firmeza y elasticidad), contenido de fenoles, capacidad antioxidante (métodos ABTS y DPPH) y actividad enzimática. Los resultados del análisis estadístico mostraron que las propiedades ópticas, contenido de fenoles totales y capacidad antioxidante no fueron afectadas significativamente (p>0.05) en todo el rango de dosis aplicado. En el caso de las propiedades mecánicas, el análisis estadístico determinó que el rango de dosis aplicado tuvo efecto significativo (p<0.05) sobre las mismas, observándose una tendencia decreciente de la firmeza y elasticidad de la piel a medida que la dosis aumentaba. El efecto del ablandamiento inducido por la irradiación gamma podría ser atribuido a cambios en la estructura de la pared celular y solubilidad de la pectina, principalmente la protopectina. En cuanto a la enzima polifenoloxidasa, se pudo observar una tendencia decreciente de su actividad, siendo significativamente diferente (p<0.05) al control aquellas muestras tratadas con la mayor dosis absorbida (2.16±0.11 kGy). Esto podría ser atribuido a que la radiación ionizante puede causar cambios en la conformación estructural de la enzima o modificaciones en los sitios activos, lo cual afecta la actividad de la misma. En conclusión, en este estudio observamos que la aplicación de la tecnología de irradiación gamma podría tener un impacto negativo sobre la textura de los arándanos. Por otro lado, el hecho que disminuya la actividad enzimática de la polifenoloxidasa hace que la calidad del arándano pueda preservarse por más tiempo.
