Evaluación de la suplementación con granos de destilería en alimentación a pasto sobre el perfil de ácidos grasos de carne proveniente de vaquillonas

The objective of this work was to evaluate the effect of grass supplementation with distillers grains (DG) on the fatty acid (FA) profile of meat from heifers. GD are the byproduct of bioethanol fermentation and retain the nutrients of corn, except for sugars. Its incorporation in confinement systems has been evaluated and modifications were observed in the FA profile of the meat, while in pastoral systems its use is recent. Therefore, the study of its incorporation as a supplement for feeding heifers represents a novel contribution to the national scientific-productive system. The results obtained indicate that supplementation with GD improves the FA contribution of the meat, related to the increase in PUFA, without generating differences in AGS or in thrombogenic and atherogenicity indices.

El objetivo de este trabajo fue evaluar el efecto de la suplementación a pasto con granos de destilería (GD) en el perfil de ácidos grasos (AG) de carne proveniente de vaquillonas. Los GD son el subproducto de la fermentación del bioetanol y retienen a los nutrientes del maíz, a excepción de los azúcares. Se ha evaluado su incorporación en sistemas de confinamiento y se observaron modificaciones en el perfil de AG de la carne, mientras que en sistemas pastoriles su uso es reciente. Por ello, el estudio de su incorporación como suplementación para la alimentación de vaquillonas representa un aporte novedoso al sistema científicoproductivo nacional. Los resultados obtenidos indican que la suplementación con GD mejora el aporte de AG de la carne, relacionado al aumento de AGPI, sin generar diferencias en los AGS ni en índices trombogénico y de aterogenicidad.
