Development of a cheese butter recipe | Разработка рецептуры сырного масла

English. A possibility of increasing the biological value of butter by adding cheese to it was studied. The task was to obtain a product with an original taste and minimal deviations of physicochemical parameters from those of the butter. There were studied 14 samples of butter added with the cheese paste of mature semi-hard cheeses (Olympic, Maasdam, Cheddar, Manchester, including as part of mixtures) and hard Parmesan cheese. The assessment of organoleptic and structural-mechanical parameters was carried out in accordance with the current technical specifications. It has been established that the inclusion of cheese paste in the butter composition contributes to strengthening the structure, increasing the thermal stability and form-holding ability. The structural and mechanical parameters of the samples are given. According to the totality of organoleptic indicators, samples containing 20 and 30% of Olympic cheese, as well as mixtures of Manchester, Maasdam, Cheddar (40%) and Maasdam, Cheddar, buttermilk (43%) were evaluated above the rest other ones. All the developed samples have a homogeneous granular structure and optimal consistency, and they can be spread well on bread at room temperature. The data obtained will allow expanding the range of natural foods having functional properties.

Russian. Изучали возможность повышения биологической ценности сливочного масла за счет добавления к нему сыра. Стояла задача получить продукт с оригинальным вкусом и минимальными отклонениями физико-химических показателей от таковых масла. Исследовано 14 образцов масла с добавлением сырной массы зрелых полутвердых сыров (Олимпийский, Маасдам, Чеддер, Манчестер, в т.ч. в составе смесей) и твердого сыра Пармезан. Оценка органолептических и структурно-механических показателей проводилась в соответствии с действующими техническими условиями. Установлено что, включение сырной массы в состав сливочного масла способствует упрочнению структуры, повышению термоустойчивости и формоудерживающей способности. Приведены структурно-механические показатели образцов. По совокупности органолептических показателей выше остальных были оценены образцы, содержащие 20 и 30% сыра Олимпийский, а также смеси Манчестер, Маасдам, Чеддер (40%) и Маасдам, Чеддер, пахта (43%). Все выработанные образцы имеют однородную зернистую структуру и оптимальную консистенцию, хорошо намазываются на хлеб при комнатной температуре. Полученные данные позволят расширить ассортимент натуральной продукции, обладающей функциональными свойствами.
