Utilización de aceites esenciales de laurel y menta como agentes antioxidantes y antimicrobianos en alimentos

Las especias son plantas que se caracterizan por su contenido de sustancias aromáticas, como los aceites esenciales (AEs). Existe un interés creciente por el desarrollo de alimentos seguros y con características naturales. La utilización de AEs como conservantes de alimentos, debido a sus propiedades antimicrobianas y antioxidantes, constituye una alternativa en este sentido. Los AEs frecuentemente son usados en concentraciones altas, lo cual implica un efecto sensorial no deseado. La utilización de la destilación molecular de camino corto puede emplearse para concentrar diferentes compuestos químicos del aceite esencial (AE) con alta actividad conservante. Este estudio tuvo por objetivo evaluar las propiedades antioxidantes y antimicrobianas de los aceites esenciales de laurel (AEL) y menta (AEM) como conservantes de alimentos y de fracciones obtenidas por destilación molecular de camino corto de aceite de laurel. El AEL y sus fracciones, destilado de laurel (DL) y residuo de laurel (RL) presentan distinta composición química, actividad antioxidante y antimicrobiana. RL se comporta como mejor antioxidante que DL, seguido por AEL. Este AE, así como sus fracciones, muestran actividad antimicrobiana frente a las bacterias evaluadas (Staphylococcus aureus, Enterococcus faecalis, Bacillus cereus, Micrococcus luteus, Escherichia coli 25922, Escherichia coli O157H, no toxigénica, Salmonella sp., y Pseudomonas aeruginosa). La adición del AEL y sus fracciones en el aceite de canola tuvo una aceptabilidad positiva (superior al punto “no me gusta ni me disgusta” de la escala hedónica) por los consumidores. El AEM mostró bajo contenido de fenoles totales (FT) y no presentó alta actividad secuestrante de radicales libres; aunque si presentó acción antimicrobiana frente a todas las cepas probadas (S. aureus, E. faecalis, B. cereus, M. luteus, E. coli 25922, E. coli O157H, no toxigénica, Salmonella sp., y P. aeruginosa). El AEL junto con su fracción RL presentaron mayor actividad antioxidante en las semillas de girasol tostadas. Además, contribuyeron a conservar su calidad sensorial. Todos los productos naturales probados preservaron la intensidad de los atributos positivos en el almacenaje de ricota, y presentaron una alta actividad contra el crecimiento de los microorganismos probados. En función de los resultados, se concluye que el AEL y sus fracciones, proporcionan protección contra el crecimiento microbiano y el deterioro oxidativo de los alimentos estudiados, actuando como conservantes naturales que pueden ser utilizados para prolongar la vida útil de productos con características similares a los indagados en este estudio de tesis. En cuanto al AEM, proporciona protección contra el crecimiento de bacterias prologando la vida útil de alimentos, constituyendo un aditivo natural muy útil especialmente aquellos alimentos con alto contenido acuoso y alta actividad agua.

Spices are plants that are characterized because of their content of aromatic substances, such as essential oils (EOs). There is a growing interest in the development of foods that are safe and have the characteristics of natural products. The use of essential oils as food preservatives, due to their antimicrobial and antioxidant properties, constitutes an alternative in this regard. The essential oils are frequently used in high concentrations, which imply an unwanted sensory effect. The use of short path molecular distillation can be used to concentrate different chemical compounds of essential oil (EO) with high preservative activity. The aim of this study was to evaluate the antioxidant and antimicrobial properties of laurel (EOL) and mint (EOM) essential oils as food preservatives and of fractions obtained by short-path molecular distillation in laurel oil. The EOL and its fractions, laurel distillate (LD) and laurel residue (LR), have different chemical composition, antioxidant and antimicrobial activity. The LR behaves as a better antioxidant agent than LD, followed by EOL. This essential oil, as well as its fractions, show antimicrobial activity against the bacteria evaluated (Staphylococcus aureus, Enterococcus faecalis, Bacillus cereus, Micrococcus luteus, Escherichia coli 25922, Escherichia coli O157H, no toxigénica, Salmonella sp., and Pseudomona aeruginosa). The addition of EOL and its fractions in canola oil exhibited a positive acceptability (above “don't like or dislike” point on the hedonic scale) by consumers. The EOM showed a low total phenol content (FT) and did not present high free radical scavenging activity; although, it did present antimicrobial action against all the strains tested (S. aureus, E. faecalis, B. cereus, M. luteus, E. coli 25922, E. coli O157H, no toxigénica, Salmonella sp., and P. aeruginosa). The EOL together with its LR fraction showed higher antioxidant activity in roasted sunflower seeds. In addition, they contributed to preserve its sensory quality. All natural compounds tested preserved the intensity of the positive attributes in ricotta storage, and presented a high activity against the growth of the microorganisms tested. Based on the results, it is concluded that EOL and its fractions provide protection against microbial growth and oxidative deterioration of the foods studied, acting as natural preservatives that can be used to extend the shelf life of food products with characteristics similar to those investigated in this thesis study. As for EOM, it provides protection against the growth of bacteria, extending the shelf life of foods, constituting a very useful natural additive, especially in those foods with high water content and high water activity.
