Determinações das curvas de secagem e das isotermas de equilíbrio higroscópico para uma mistura de milho nas espigas (Zea mays l.) dos cultivares AG 1051 e AG 122 | Determination of drying curves and curves of equilibrium moisture for mix of Corn (Zea Mays L.) in spike, cultivates AG 1051 and AG 122

O estabelecimento das isotermas de equilíbrio higroscópico é importante para definir limites de desidratação do produto, estimar as mudanças de umidade sob determinada condição de temperatura e umidade relativa do ar ambiente e para definir os valores de umidade propícios ao início da atividade dos agentes patógenos que poderão provocar a deterioração do produto. Assim, desenvolveu-se este trabalho objetivando o estabelecimento das isotermas de equilíbrio higroscópico de milho nas espiga, das variedades AG 1051 e AG 112, e das curvas de secagem em camada fina, das mesmas variedades, na faixa de temperatura entre 37 a 55 o C. Além disso, ajustou-se um modelo matemático que possibilitou estimar a umidade de equilíbrio de sementes de milho nas espigas, estudou-se as curvas de secagem de sementes de milho nas espigas obtidas em camadas delgadas, analisando as isotermas de dessorção, oferecendo, assim, informações sobre o seu comportamento, em ambiente controlado, fornecendo subsídios a pesquisadores, industriais, produtores e extensionistas que pesquisam sobre os problemas de secagem e armazenamento do milho nesta condição. Para se alcançar esses objetivos foram determinadas as isotermas de dessorção e as curvas de secagem. Os tratamentos foram realizados utilizando-se uma unidade condicionadora de ar (AMINCO-AIR), dotada de dispositivos para o controle da temperatura e umidade relativa e de um sistema de acondicionamento de espigas, composto por três bandejas removíveis com fundo telado, para permitir a passagem do ar por entre a massa de produto. As espigas foram acondicionadas em bandejas com fundo de telas perfuradas, e sua massa individual foi medida em balança digital com capacidade de 10.000 g, com precisão de 0,1 g. O fwas measured in digitalmonitoramento da massa foi feito com intervalos regulares de 4 horas, até atingir a umidade de equilíbrio. O fluxo de ar do sistema foi calculado a partir da medida da velocidade do ar feita com anemômetro de lâminas rotativas. O fluxo foi mantido constante para todos os tratamentos em, aproximadamente, 10 m 3 .min -1 .m -2 . As temperaturas de bulbo seco e bulbo úmido do ar de secagem foram medidas e monitoradas utilizando-se um psicrômetro, instalado no interior da câmara próximo às bandejas contendo as amostras do produto. A umidade relativa do ar foi calculada por meio de um programa computacional (GRAPSI) desenvolvido a partir de equações psicrométricas. Para obter-se as curvas de secagem, utilizou-se grãos de milho nas espigas, com umidade inicial de 25 ± 1,0 % b.u. Para os testes experimentais, utilizou-se um secador de camada delgada, que possui uma câmara de secagem com seção circular de 0,53 m de diâmetro e 0,63 m de altura, com o fundo telado. As espigas foram acondicionadas em uma bandeja com seção retangular. O sistema de aquecimento do ar era composto por três resistências elétricas e um regulador de voltagem para ajuste da temperatura. Usou-se um ventilador tubo-axial, dotado de diafragma, para regular a vazão de ar, acionado por um motor elétrico de 186,5 W (0,25 HP). O secador foi instrumentado para coleta de dados de temperatura e pressão estática. A massa inicial das amostras variou entre 400 e 500 g. Durante os testes, as amostras foram pesadas com intervalos de tempo pré-estabelecidos, definidos em testes preliminares. As umidades inicial e final do produto foram medidas pelo método de estufa com circulação natural de ar, à temperatura de 105 ± 3 oC, durante 24, 48 e 72 horas. Realizaram-se testes com ar aquecido às temperaturas de 37oC e 55 oC e fluxo de ar de 25 m3min-1m-2 para espessura de camada de 0,1 m. De acordo com os resultados observados, pôde-se concluir que: a) O modelo matemático de SHARAF ELDEEN, ajustado pela utilização das equações de regressão não-linear, pode ser utilizado para predizer os valores de umidade de equilíbrio higroscópico e para a elaboração das curvas de secagem de grãos de milho nas espigas; b) a umidade de equilíbrio higroscópico de milho nas espigas aumenta com o aumento da umidade relativa e a diminuição da temperatura; c) a taxa de secagem foi influenciada pela temperatura e umidade relativa do ar de secagem, independentemente da variedade do produto.

The establishment of curves of equilibrium moisture is important to define limits of dehydration of the product, to estimate the humidity changes under certain temperature of air and relative humidity conditions of the atmosphere and to define the favorable humidity values to the beginning of the activity of the pathogens agents that would provoke deterioration of the product. Thus, this work was developed with the purpose of the establishment of curves of equilibrium moisture for ear of corn, varieties AG 1051 and AG 112; and curves of drying in fine layers, for the same varieties in the temperature interval between 37 to 55 °C. Additionally, it was adjusted a mathematical model that facilitates the estimation of the balance humidity of corn seeds in the spikes; it was studied the drying curves of corn seeds in the spikes obtained in fine layers, and it was analyzed the desorption isotherms; offering information about the corn behavior in spike, in certain atmospheres conditions. Moreover, this works could it be used as a small tool of collaboration to other researchers, industry and farmers that intend to overcome the drying and storage problems of corn under these conditions. To be fulfilled those objectives the curves of equilibrium moisture and drying curves were determined. The treatments were accomplished by using an air conditioning unit (AMINCO-AIR), endowed with devices for the control of the temperature and relative humidity of the supplied air and a system disposal of the spikes with three removable trays with screen bottom, to allow the passage of the air through the product mass. The mass of spikes was set in trays with screen bottom and its individual mass was measured in digital scale with capacity of 10.000 g and precision of 0,1 g. The mass monitoring was made in regular intervals of 4 hours until a humidity balance was reached. The flow of air was determined from the speed of the air supplied by the equipment with the aid of a constant rotative anemometer of sheets and maintained for all the treatments in, approximately, 10 m 3 .min -1 .m -2 . The temperature and the relative humidity of the mass of air were measured and monitored being used a psycrometer, installed inside the camera close to the trays contends the samples of the product. The relative humidity of the air was calculated by means of a software (GRAPSI) developed by using psychometrics equations. For the elaboration of the drying curves, the used product had initial humidity around 25 ± 1,0 %. For the experimental tests a layer fine dryer was used. It possesses a drying camera with circular section of 0,53 m in diameter and 0,63 m of height, with a screen bottom. The spikes were conditioned in a rectangular section tray. Three electric resistances and a voltage regulator to adjustment temperature compose the air heating system. An axial pipe fan was used, endowed with diaphragm, to regulate the flow of air, supplied by an electric motor of 186,5 W (0,25 HP). The dryer was set properly to collect temperature data and static pressure. The initial mass of the samples varied between 400 and 500 g. During the tests the samples were weighing at pre-established intervals of time, defined in preliminary tests. The initial and final humidity of the product were measured by the gravimetric method at 105 ± 3 °C, during 24, 48 and 72 hours. Tests took place with air heated up to temperatures of 37 °C and 55 °C and flow of air of 25 m 3 .min -1 .m -2 for layer height of 0,1 m. In agreement with the obtained results it could be ended that: a) SHARAF ELDEEN'S mathematical model, adjusted by the use of the non lineal regression equations, can be used to predict the values of hygroscopic humidity balance and for the elaboration of the drying curves of corn in spike; b) hygroscopic humidity balance of corn in spike increases with increase of relative humidity and decrease of temperature; c) the drying rate was influenced by the temperature and relative humidity of the drying air, independently of the variety of the product.
