Metodologia dos limiares hedônicos variando dois estímulos | Hedonic threshold methodology varying two stimuli

Dentre as metodologias de limiares afetivos, destaca-se a proposta por Lima Filho et al. (2015) denominada Metodologia dos Limiares Hedônicos (MLH), que inclui dois novos limiares afetivos: o Limiar de Aceitação Comprometida (LAC) que indica a intensidade do estímulo na qual começa a ocorrer redução significativa (p≤0,05) da aceitação do produto em relação à amostra controle e o Limiar de Rejeição Hedônica (LRH) que indica a intensidade do estímulo que resulta em rejeição sensorial do produto pelo consumidor, que foram estudados variando um estímulo. Neste estudo, propôs-se avaliar a MLH quando dois estímulos são variados (MLHE 2 ). Os estímulos estudados foram concentração de sódio e de alho em pó em hambúrguer, com objetivo de reduzir o teor de sódio. A redução de sódio em alimentos processados tem sido buscada por diversos países por seu consumo excessivo estar relacionado à diversas doenças. A combinação de estímulos que levou ao menor teor de sódio para o LAC de interesse (LACi) foi: 0,25% de sódio e 0,96% de alho em pó - redução de quase 70%, se comparado ao controle (0,827% de sódio e 0% de alho em pó). Para o LRH de interesse (LRHi), a combinação que permitiu maior redução de sódio foi: 0,11% de sódio e 0,99% de alho em pó, reduzindo, portanto, quase 87% do teor de sódio quando comparado ao controle. Um novo limiar foi encontrado nesse estudo, denominado Limiar de Aceitação Favorecida (LAF), que representa as intensidades de estímulos em que começa a ocorrer maior aceitação sensorial quando comparada à amostra controle (p≤0,05); esse limiar possibilita variar os estímulos e ainda melhorar a aceitação do produto. A combinação de estímulos referentes ao LAF com menor teor de sódio (LAF de interesse) foi de: 0,37% de sódio e 0,96% de alho em pó. Portanto, é possível reduzir 55% de sódio e ainda aumentar a aceitação do produto quando comparado à amostra controle (p ≤ 0,05). A Metodologia dos Limiares Hedônicos variando dois estímulos (MLHE 2 ) obteve importantes resultados quando aplicada ao hambúrguer, demonstrando que a redução de quase 70% de sódio pode ser utilizada sem afetar a aceitação sensorial do produto (LACi). Ainda, é possível reduzir quase 87% e manter a aceitação do produto (LRHi) e com a determinação do novo limiar (LAF) descobriu-se que reduções de sódio de até 55%, combinado com adição de alho em pó, podem ainda favorecer a aceitação sensorial do produto (LAFi).

Among the new methodologies of affective threshold, the one proposed by Lima Filho et al. in 2015 stands out. It was named Hedonic Threshold Methodology (HTM), which includes two new affective thresholds: the Compromised Acceptance Threshold (CAT) which indicates the intensity of stimulus that there is a significant reduction (p≤0,05 ) in the acceptance of the product compared to the control sample and the Hedonic Rejection Threshold (HRT) which indicates the intensity of stimulus that results in a sensorial rejection of the product by the consumer, which were studied varying one stimulus, which were studied varying only one stimulus. In this study, it was proposed to evaluate the HTM when two stimuli are varied (HTM2S). The studied stimuli were the sodium and garlic powder concentrations in hamburgers aiming the reduction of sodium content. The reduction of this element in processed food has been sought in different countries due to various diseases be related to its excessive consumption. The combination of stimuli that resulted in lower sodium content for the CAT (CAT of interest) was: 0,25% of sodium and 0,96% of garlic powder - a reduction of approximately 70% compared to the control (0,827% of sodium and 0% of garlic powder). For the HRT, the combination that allowed the most significant sodium reduction (HRT of interest) was: 0,11% of sodium and 0,99% of garlic powder, which reduced almost 87% the amount of sodium compared to the control. A new threshold was found in this study named Favored Acceptance Threshold (FAT), which represents the intensity of stimuli in which it begins to have greater acceptance that the control sample (P<0,05), this threshold allows to vary stimuli and yet improve the acceptance of the product. The combination of stimuli that refers to FAT with the lowest sodium content (FAT of interest) was: 0,37% of sodium and 0,96% of garlic powder, this combination allowed a reduction of 55% of this element and yet improve the acceptance of the product when compared to the sample control (p<0,05). The Methodology of hedonic thresholds varying two stimuli (HTM2S) obtained excellent results when it is applied to hamburger, which shows that a reduction of almost 70% can be used without affecting the sensory acceptance of the product (CATi); It is possible to reduce almost 87% and yet keep the acceptance of the product (HRTi) and using the new threshold (FAT) it was found that reductions of sodium up to 55% may yet favor a sensory acceptance of the product (LAFi).
