Estrategias de riego deficitario y productividad del agua en olivares intensivos localizados en climas de tipo continental y totalmente dependientes del riego | Deficit irrigation strategies and water productivity in high-density olive orchards located in continental climates and fully dependent on irrigation

La producción de aceitunas tiene una larga trayectoria en Argentina hasta la situación actual en la que se ha consolidado como el principal elaborador de aceite de oliva y de aceituna de mesa en América. El Capítulo I describe como fue la expansión del cultivo en Argentina y cómo evolucionó hacia una olivicultura intensiva, con olivares de grandes dimensiones, de marcos de plantación más densos y altamente tecnificados en riego y en el manejo de cultivo. Los olivares argentinos se ubican entre las latitudes 28 y 32º S, por tanto, más cerca del Ecuador que las zonas tradicionales de cultivo del Mediterráneo. De las casi 78.000 ha actuales, más del 90% se localizan en el oeste argentino, próximas a la cordillera de los Andes, en las provincias de Catamarca, La Rioja, San Juan y Mendoza. Un rasgo importante que distingue a esta olivicultura de oasis, y que la diferencia notablemente del hábitat natural del olivo, es que esta región se caracteriza por tener un clima de tipo continental con muy escasas precipitaciones concentradas en el verano lo cual, junto a una alta demanda evaporativa, hace imprescindible el riego, generalmente basado en el uso de aguas subterráneas. Otro rasgo climático relevante son las temperaturas medias anuales, en general, más altas que las típicas regiones olivareras de la Cuenca del Mediterráneo. Las temperaturas favorables de otoño y principios de invierno modifican el ritmo de crecimiento vegetativo y hacen que el olivo bien regado crezca vigorosamente en ese periodo. En aquellos olivares con modelos de producción modernos y localizados en zonas con bajo riesgo climático el potencial productivo suele ser muy alto. Sin embargo, la repentina llegada de frentes fríos del Sur al inicio del invierno causa graves daños en los olivares debido a las bajas temperaturas, siendo la pérdida de producción por las heladas uno de los principales problemas de la olivicultura en Argentina. La finalidad del trabajo presentado en el Capítulo II, fue estudiar aspectos fisiológicos que intervienen en el proceso de aclimatación del olivo a las temperaturas congelantes para luego implementar estrategias de riego que permitiesen afrontar de mejor manera las temperaturas extremas invernales. Se realizó un experimento con plantas jóvenes de olivo en macetas que se expusieron durante el otoño a dos condiciones de aclimatación por frío (aclimatadas y no aclimatadas) y dos condiciones de estrés hídrico (con déficit hídrico y sin déficit hídrico). Posteriormente, en condiciones de campo en Argentina se implementaron estrategias de riego deficitario durante el otoño-invierno para evaluar la resistencia a las heladas en dos variedades comúnmente implantadas (‗Arbequina‘ y ‗Barnea‘). En las plantas en macetas, tanto la aclimatación por frio como el estrés hídrico aumentaron la resistencia a la congelación de plantas de olivo. A las 5 semanas de iniciados los tratamientos en otoño, solo las plantas con déficit hídrico tuvieron un menor T° letal de congelación (LT50) debido a que las temperaturas mínimas no habían sido lo suficientemente bajas para inducir aclimatación al frío. Una vez pasadas 17 semanas, el tratamiento que combinó estrés hídrico y aclimatación al frío fue 2.5 °K más resistente que el tratamiento sin aclimatación ni estrés. Esto también quedó evidenciado en los experimentos realizados con olivos adultos en condiciones de campo donde se logró una disminución de la LT50 con un mayor estrés hídrico inducido por riego deficitario. El descenso de la LT50 durante el invierno se observó tanto en macetas como en el campo y parece estar asociado a la ocurrencia del estrés por frío. Los resultados obtenidos indican que un riego deficitario en otoño puede mejorar la resistencia de los tejidos más expuestos a las heladas en aquellas regiones donde los otoños suelen ser cálidos y se retrasa el proceso natural de aclimatación al frío. Otro de los problemas centrales de la olivicultura Argentina, abordado en Capítulo III, se centra en la sostenibilidad del regadío asociada a unas necesidades muy elevadas de riego, debido a la alta ETo anual y la escasez de lluvias. En los últimos años se está observando una disminución de caudales vertidos y una modificación en los hidrogramas de los ríos lo que puede afectar al suministro de agua de riego en un futuro próximo. Para conocer la respuesta productiva de un olivar adulto a un suministro variable de agua bajo las condiciones argentinas se realizó un experimento de tres años que evaluó la productividad económica del agua (WP), en un olivar de alta densidad en Cañada Honda, provincia de San Juan, donde el recurso hídrico es extremadamente escaso. Se utilizó el cultivar ―Arbequina‖ bajo siete regímenes de riego que suministraron el 120%, 100%, 90%, 80%, 70%, 60% y el 40% de la ETc estimada. El olivar disminuyó claramente su rendimiento en respuesta a la reducción del riego, pasando de ca. 3050 kg de aceite ha-1 al 120 ETc a ca. 1100 kg de aceite ha-1 a 40% de la ETc. La producción máxima de aceite (3080 kg de aceite ha-1) se obtuvo con 860 mm de riego. La WP marginal alcanzó un máximo (5,9 kg de aceite ha-1 mm-1) a 550 mm de riego. En términos económicos, el olivicultor obtiene los máximos beneficios (US$ 3140 ha-1) con 850 mm de riego en las condiciones actuales de costes de agua y energía. Sin embargo, si en un futuro la escasez de agua en la región dificulta el mantenimiento de los niveles actuales de suministro de agua, será necesario imponer restricciones a través de políticas de conservación del recurso hídrico para alcanzar un equilibrio entre las metas económicas, ambientales y de sustentabilidad.

Olive production has a long history in Argentina up to the current situation where it has established as the main producer of olive oil and table olives in America. Chapter I described the expansion in Argentina and the evolution towards modern olive growing, based on largescale development of high-density (HD) olive orchards and high technology in irrigation and crop management. The Argentine olive orchards are located between latitudes 28 and 32º S, therefore, closer to the Equator than the traditional growing areas of the Mediterranean. More than 90% of the actual 78,000 ha are located in western Argentina, close to the Andes mountain range, in the provinces of Catamarca, La Rioja, San Juan and Mendoza. An important feature that distinguishes is the olive growing in oasis, and that significantly differentiates from the natural habitat of the olive tree. This region is characterized by having a continental-type climate with very little rainfall concentrated in the summer which, together with a high evaporative demand, makes irrigation essential, generally based on the use of groundwater. Another relevant climate feature is the average annual temperatures, which are generally higher than the typical olive-growing regions of the Mediterranean Basin. The favorable temperatures of autumn and early winter modify the patter of shoot growth and make the well-watered olive trees grow vigorously in that period. In those olive orchards with modern olive growing and located in areas with low climate risk, the yield potential is usually very high. However, the sudden arrival of cold fronts from the South at the beginning of winter causes serious damage to the olive due to low temperatures, being the production losses due to frost one of the main problems of olive industry in Argentina. The aim of our work presented in Chapter II was to study physiological aspects involve in the acclimation process of the olive tree to freezing temperatures in order to then implement irrigation strategies that would better cope with extreme winter temperatures. An experiment was carried out with olives in pots that were exposed during the autumn to two cold acclimation conditions (acclimated and non-acclimated) and two water stress conditions (water deficit and no water deficit). Subsequently, under field conditions in Argentina, deficit irrigation strategies were implemented during the fall-winter to evaluate the frost tolerance of two commonly planted varieties ('Arbequina' and 'Barnea'). In potted olives, both cold acclimation and water stress increased resistance to freezing. Five weeks after treatments settings, only plants with water deficit reached a lower lethal freezing temperature (LT50), because the minimum temperatures were not low enough to induce cold acclimation. After 17 weeks, the treatment that combined water stress and cold acclimation was 2.5 °K more resistant than the treatment without acclimation. This was also evidenced in the experiments carried out with adult olive trees under field conditions, where a decrease in LT50 was achieved with greater water stress induced by deficit irrigation. The decrease in LT50 during winter could be associated with the occurrence of cold stress. The results obtained indicate that deficit irrigation in autumn can improve the resistance of the tissues more exposed to frost in those regions where autumns are usually warm and the natural process of cold hardening is delayed. In recent years, a decrease in spills and a changes in the hydrographs of the rivers have been observed, probably due to the expansion of the demand for irrigation water. Another of the central problems of Argentine olive growing, addressed in Chapter III, focuses on the sustainability of irrigation associated with very high irrigation needs, due to the high annual ETo and the lack of rainfall. In recent years, changes in river hydrograph have been observed. The impact of such reduction is not only seen in the amount of surface water available for irrigation but also in the recharge of aquifers. This situation will threaten irrigation water supplies in the near future. The aim of this chapter was to determine the yield response to variable water supply of a high-density olive orchard and to assess the economic water productivity (WP) of the olive, growing in an environment where the water resource is extremely scarce. During three seasons in an olive orchard (cv. ―Arbequina‖) we evaluated seven irrigation regimes which supplied 120%, 100%, 90%, 80%, 70%, 60% y 40% of the estimated ETc. It was observed a clear decline in yield in response to the irrigation decline, from 3 t7ha of oil at maximum water supply to about 1 t/ha of oil at 40% ETc. The maximum oil production (ca=3080 kg oil ha-1) was obtained with 860 mm of irrigation, . The marginal WP reached a maximum (5.9 kg oil ha-1 mm-1) at 550 mm of irrigation and declined thereafter, reaching zero at 860 mm. If in the near future water scarcity in the region makes it difficult to maintain the present levels of water supply, aimed at maximizing profits, there will be the need to impose restrictions through resource conservation policies to reach an equilibrium between economic, environmental, and sustainability goals.
