Biokjemisk sammensetning av gonader fra kråkeboller (Strongylocentrotus droebachiensis) - Effekt av sesong, miljø og fôrsammensetning

Drøbakkråkebollen (Strongylocentrotus droebachiensis) har i de siste 50 årene beitet ned tareskog langs norskekysten, og omtales ofte som et skadedyr. I andre deler av verden er kråkebollegonader en høyt ansett matvare på grunn av sin karakteristiske søt-salte smak. Gonadene man finner i drøbakkråkeboller langs norskekysten er som regel for små til at kommersiell fangst kan bli lønnsomt, og det har derfor vært en økt interesse fôr fangst av ville kråkeboller og påfølgende oppfôring for å øke gonadeutbytte. Én av de viktigste suksessfaktorene i slik produksjon er formuleringen av fôret, som påvirker både vekst, smak, tekstur, farge og biokjemisk sammensetning av kråkebollegonadene. I tillegg vil gonadene påvirkes av sesong og av hvilket geografisk område de er høstet fra, slik at det er viktig å kartlegge hvordan det påvirker sluttproduktet. I denne oppgaven ble vann-, aske-, protein-, lipidinnhold samt sammensetning av fettsyrer og aminosyrer bestemt i gonader fra ville og oppfôrede kråkeboller fra fire ulike oppfôringsforsøk (populasjonsforsøk (PF) 1, PF2, fôringsforsøk (FF) 1 og FF2). I PF1 og PF2 ble kråkeboller høstet fra fire ulike lokaliteter i henholdsvis november 2020 og juli 2021, og gitt et kommersielt formulert fôr i ni uker. Effekten av sesong, habitat og fôrsammensetning på gonader ble undersøkt. Gonadeindeksen (GI) varierte både mellom de ulike populasjonene og årstidene. Etter oppfôring med samme fôr i 9 uker, var både GI og næringssammensetning normalisert slik at det bare var mindre variasjoner mellom de forskjellige populasjonene. Eksempelvis inneholdt alle de oppfôrede gonadene en gunstig fettsyresammensetning med høyere innhold av de marine n-3 flerumettede fettsyrene (PUFA), og da særlig eikosapentaensyre (EPA: C20:5n-3) sammenlignet med n-6 PUFA. I FF1 og FF2 ble kråkeboller høstet fra én lokalitet per forsøk i henholdsvis april og juli 2021, og gitt ulike eksperimentelle formulerte fôr samt naturlige dietter bestående av S. latissima i ni uker. Effekt av fôrsammensetning på gonader ble undersøkt. Etter at kråkeboller fra samme populasjon hadde blitt fôret med ulike fôr i 9 uker var det større variasjon i næringsinnhold (aske, protein og lipider) og sammensetningen av fettsyrer og aminosyrer (AA), sammenlignet med populasjonsforsøkene. Disse variasjonene i fettsyresammensetning og særlig aminosyresammensetning (høyrere innhold av bitre AA sammenlignet med ville gonader) kan ha stor betydning for smaksegenskapene til gonadene. Konklusjonen er at oppfôring av kråkeboller er en effektiv måte å produsere sjømat med gunstig ernæringsprofil inkludert relativt høy andel av marine n-3 PUFA som EPA, men gjennom bruk av ulik fôrsammensetning så er det mulig å påvirke sammensetning av proteiner og lipider i gonadene.

The green sea urchin Strongylocentrotus droebachiensis has grazed down vast areas of kelp forests along the coast of Norway throughout the last 50 years and is largely considered a pest. However, sea urchin gonads are a prized food item in other parts of the world. The gonads found in S. droebachiensis along the Norwegian coast are generally too small to harvest commercially, and there has been increased interest in the catch and following feeding of wild urchins to increase gonad yield, known as roe enhancement. One of the most important success factors in roe enhancement is the formulation of the feed, which affects growth, quality charcteristics, and biochemical composition of sea urchin gonads. The gonads will also be affected by season and by the geographical area the urchins are harvested from. It is important to characterize how these parameters influence the end product. In this thesis the moisture-, ash-, protein-, lipid content, and composition of fatty acids and amino acids were characterized in gonads from wild and enhanced sea urchins from four different feeding trials (Population trial (PF) 1, PF2, feeding trial (FF) 1 and FF2). In PF1 and PF2 sea urchins were collected from four separate locations in November 2020 and July 2021 and fed a commercial formulated feed for a duration of 9 weeks. Effect of season, habitat and feed composition on gonads was analysed and compared to that of wild urchins. The gonadal index (GI) varied between the different populations and the seasons. After feeding with the same feed for nine weeks, both GI and nutrient composition were normalized so that there were only minor variations between the different populations. For example, all the enhanced gonads contained a favourable fatty acid composition with a higher content of the marine n-3 polyunsaturated fatty acids (PUFA) and eicosapentaenoic acid (EPA: C20: 5n-3) compared to n-6 PUFA. In FF1 and FF2 urchins were collected from one location per trial and given different experimental feeds as well as a natural diet consisting of S. latissima for a duration of 9 weeks. Effect of feed composition on gonads was analysed. After sea urchins from the same population had been fed different feeds for nine weeks, there was greater variation in nutrient content (ash, protein and lipids) and the composition of fatty acids and amino acids (AA) compared with the population experiments. These variations in fatty acid composition and especially amino acid composition (higher content of bitter AA compared to wild gonads) can be of great importance for the taste properties of the gonads. In enhanced sea urchins, the content of bitter AA was higher compared to wild sea urchins. In conclusion, sea urchin gonad enhancement is an effective way to produce seafood with a favourable nutritional profile, including a relatively high proportion of marine n-3 PUFA such as EPA, but by using different feed compositions, it is possible to influence the composition of proteins and lipids in the gonads.
