Features of the accumulation and distribution of heavy metals in the organs and tissues of Hereford cattle | Особенности аккумуляции и распределения тяжелых металлов в органах и тканях герефордского скота

The research is aimed to study the characteristics of the accumulation and distribution of heavy metals (HM) in the organs and tissues of Hereford cattle to develop a strategy to produce livestock products. The work involved Hereford bulls (n=31) raised in the Novosibirsk region. After slaughter, samples of heart, diaphragmatic muscles, spleen, liver, kidneys and testes weighing 100 g each were collected from the animals. The content of HM in the samples was determined by atomic absorption spectrometry on an MGA-1000 analyzer. In the organs and tissues of Hereford cattle, the studied mineral elements are distributed discretely. Iron, cadmium and copper are characterized by pronounced tropism. Cadmium accumulates predominantly in kidneys; the copper content in the liver is approximately 20 times higher than in other organs. The spleen, playing a key role in the process of hematopoiesis, serves as the main iron depot. The distribution of lead and zinc in the body is more homogeneous than other HM. The level of phenotypic variability in the content of these elements varies significantly depending on the organ. The amount of lead in the kidneys and heart is 2-6 times lower than in other organs and tissues. According to the results of multivariate statistical analysis, the accumulation of heavy metals in muscle tissue on average reflects their load on the body of cattle. The liver contains significantly more manganese, copper and iron than other organs and tissues, and individual phenotypic variability in the content of these metals in the organ is higher than in the lungs, heart, spleen, kidneys, muscle tissue and testes. The spleen accumulates large amounts of iron and lead (237.2 and 0.116 mg/kg, respectively), while the level of cadmium in the organ is relatively low (0.014 mg/kg). In the kidneys, on the contrary, there is a high concentration of cadmium (up to 1.4 mg/kg), but low levels of iron and lead (40.2 and 0.026 mg/kg).

Исследования проводили с целью изучения особенностей аккумуляции и распределения тяжелых металлов (ТМ) в органах и тканях герефордского скота для разработки стратегии производства животноводческой продукции. Работу выполняли на бычках герефордской породы (n=31), выращенных на территории Новосибирской области. После убоя от животных отбирали образцы сердца, диафрагмальных мышц, селезенки, печени, почек и семенников массой 100 г каждый. Содержание ТМ в образцах определяли методом атомно-абсорбционной спектрометрии на анализаторе МГА-1000. В органах и тканях герефордского скота изучаемые минеральные элементы распределены дискретно. Железо, кадмий и медь характеризуются ярко выраженной тропностью. Кадмий преимущественно накапливается в почках, содержание меди в печени примерно в 20 раз больше, чем в других органах. Селезенка, играя ключевую роль в процессе кроветворения, служит основным депо железа. Распределение свинца и цинка в организме более однородно, чем других ТМ. Уровень фенотипической изменчивости содержания этих элементов значительно различается в зависимости от органа. Количество свинца в почках и сердце было в 2…6 раза ниже, чем в других органах и тканях. По результатам многомерного статистического анализа аккумуляция ТМ в мышечной ткани в среднем отражает их нагрузку на организм крупного рогатого скота. Печень содержит значительно больше марганца, меди и железа, чем другие органы и ткани, а индивидуальная фенотипическая изменчивость содержания этих металлов в органе выше, чем в легких, сердце, селезенке, почках, мышечной ткани и семенниках. Селезенка накапливает большое количество железа и свинца (237,2 и 0,116 мг/кг соответственно), при этом уровень кадмия в органе относительно низкий (0,014 мг/кг). В почках, напротив, отмечается высокая концентрация кадмия (до 1,4 мг/кг), но низкие уровни железа и свинца (40,2 и 0,026 мг/кг).
