The aim of this work was to study the component composition of aroma-forming compounds of berries of different grape varieties grown in the Republic of Belarus. The article presents the results of studies of the components that form the aroma of berries of 47 grape varieties grown in the Republic of Belarus at different ripening periods. The content of the main compounds that form the aroma of grapes was established: alcohols and aldehydes that give the berries the smell of unripe fruits; saturated and unsaturated aliphatic esters with a typical fruit aroma; terpenoids that give grapes a muscat aroma. It is shown that the composition and amount of aroma-forming components have significant differences depending on the type and variety of grapes. / Целью данной работы являлось исследование компонентного состава ароматобразующих соединений ягод различных сортов винограда, выращиваемого в Республике Беларусь. Представлены результаты исследований компонентов, формирующих аромат ягод 47 сортов винограда, выращиваемых в Республике Беларусь различных сроков созревания. Установлено содержание основных соединений, формирующих аромат винограда: спиртов и альдегидов, придающих ягодам запах незрелых фруктов; насыщенных и ненасыщенных алифатических сложных эфиров, обладающих типичным ароматом фруктов; терпеноидов, придающих ягодам винограда мускатный аромат. Показано, что состав и количество ароматобразующих компонентов имеет существенные отличия в зависимости от вида и сорта винограда.
