The aim of the research was to study different drying methods to regulate the moisture content of hazelnuts (whole and kernels) when delivered to the consumer. The objects of research were 4 varieties of hazelnuts (Barselonskiy, Katalonskiy, Kosford, Yashma), grown in the experimental garden of the fruit crop breeding department of the Republican Scientific and Production Subsidiary Unitary Enterprise "The Institute for Fruit Growing". As a result of the research, it was found that the moisture content of freshly harvested nuts in the shell was in the range of 8.4-27.1%, of kernels – 4.8-19.9%, depending on the variety. Convection drying made it possible to achieve the required results in terms of mass moisture content for nuts in the shell in 4-6 hours, depending on the variety, for nut kernels - in 1-2 hours. / Цель исследований – изучить различные способы сушки для регулирования содержания влаги в орехах фундука (целых и ядер) при доведении до потребителя. Объектами исследований являлись 4 сорта фундука (Барселонский, Каталонский, Косфорд, и Яшма), выращенные в опытном саду отдела селекции плодовых культур РУП «Институт плодоводства». В результате исследований установлено, что влажность свежесобранных орехов в скорлупе находилась в пределах 8,4-27,1%, ядер – 4,8-19,9% в зависимости от сорта. Сушка конвекционным способом позволила достичь необходимых результатов по содержанию массовой влаги для орехов в скорлупе за 4-6 ч. в зависимости от сорта, для ядер орехов – за 1-2 ч.
