Exigências energéticas e protéicas de novilhos de Aberdeen Angus submetidos ou não ao ganho compensatório | Energy and protein requirements of Aberdeen Angus steers submitted or nor to a compensatory gain

Este trabalho teve como objetivos avaliar o efeito do ganho compensatório sobre o desempenho, a composição corporal, características qualitativas e quantitativas da carcaça e da carne e exigências líquidas de energia e proteína de novilhos Aberdeen Angus abatidos aos dois anos de idade. Foram utilizados 40 novilhos castrados com peso vivo (PV) médio inicial de 237,6 kg e 16 meses de idade. Durante a fase de recria, os animais foram submetidos a dois níveis nutricionais: com restrição alimentar - CR (ganho de peso médio diário (GMD) = 104 g) ou sem restrição alimentar - SR (GMD =733 g). Após um período de 114 dias foram abatidos quatro animais de cada grupo para serem utilizados como referência para as estimativas do peso do corpo vazio (PCVZ) e de sua composição corporal. Os 32 animais foram confinados, com dietas contendo quatro níveis de concentrado (25; 40; 55 e 70%) com base na matéria seca. O delineamento experimental foi o inteiramente casualizado, com quatro repetições, em arranjo fatorial 2 x 4 (2 níveis nutricionais na recria x 4 níveis de concentrado na terminação). O volumoso utilizado foi a silagem de milho e o concentrado a base de milho, farelo de trigo, farelo de soja e minerais. Após o abate, todas as partes do corpo do animal foram pesadas e amostradas. A secagem das amostras foi feita em estufa, pré-desengorduradas, moídas para determinação do extrato etéreo e nitrogênio total. Os conteúdos de proteína e gordura corporal foram determinados em função das concentrações destes em cada fração do corpo do animal. As exigências líquidas de proteína e energia, para ganho de 1kg de PCVZ foram obtidas, derivando as equações de predição do conteúdo corporal de proteína, gordura e energia em função do logaritmo do PCVZ. O aumento do PV dos animais, proporcionou incremento dos conteúdos de proteína, gordura e energia. As concentrações de gordura e energia por unidade PCVZ aumentaram e o conteúdo corporal de proteína, diminui com a elevação do peso dos animais. Animais com restrição alimentar na recria apresentaram maior ganho médio diário de peso maior consumo médio de matéria seca em percentual PV e tamanho metabólico, menor conversão alimentar na fase de terminação, menores pesos de abate, de carcaça quente e fria, carcaças de menor comprimento e, com menores pesos absolutos de traseiro, dianteiro e costilhar. Os rendimentos de carcaça quente e fria aumentaram linearmente com o aumento do concentrado na dieta durante a terminação. O incremento no nível de concentrado promoveu decréscimo linear no percentual de músculo na carcaça. O nível nutricional na recria e terminação não afetou a qualidade da carne.

The objective of the experiment was to evaluate the effect of compensatory gain on development, body composition, meat and carcass quantitative qualitative characteristics and energy and protein requirements of 40 Aberdeen Angus steers with 237,6 kg initial live weight (LW), 16 months old and slaughtered at two years of age. During growth phase, the animals were submitted to two nutritional levels: with feed restriction – WR (with average daily weight gain (ADG) = 104 g) or without feed restriction – NR (ADG = 733 g). After a 114 days period four animals of each group (WR and NR) were slaughtered as reference for the empty body weight (EBW) estimates and the initial body composition of the other animals. The remaining animals were allotted to feedlot, with four different levels of concentrate in the diet (25; 40; 55 and 70%), dry matter basis. The experimental design was a complete randomized, with four replicates, in a 2 x 4 factorial arrangement (two feed levels during growth x four concentrate levels during finishing). The roughage used was corn silage (hybrid AG 5011) and the concentrates were based on soybean meal, corn grain, wheat bran and minerals. After slaughter, all animal body parts were weighted and sampled. The samples were dried in stove at 105°C, pre-defatted with ether, grinded and ether extract and total nitrogen concentrations were determined. The protein and fat body contents were a function of their concentrations in the several parts of the body. By deriving the prediction equations of body content of protein, fat and energy, as a function of the logarithm of EBW, the net requirements of protein and energy, for gains of 1 kg EBW, were estimated. The increase in LW of animals resulted increase in protein, fat and energy contents. Concentration of fat and energy for EBW increased and protein body content decreased as LW increased, independent of feed level to which the animals were submitted during in growth phase. Animals submitted to nutritional restriction during growth showed higher average daily gain, higher dry matter intake expressed as percent of liveweight, and metabolic body size, lower feed efficiency in the finishing phase, lower slaughter weights, hot and cold carcass weights, smaller carcass length, and lower absolute weights of the forequarter, side and pistol cuts. Hot and cold carcass dressing percentages increased linearly with increasing of concentrate levels during finishing. The increase of the concentrate level during finishing resulted in linear decline of the carcass muscle percentage. The nutritional level during growth on pasture and feedlot finishing, did not affect meat quality.
