Possible parasitic diseases after consumption of wild animal products, so-called 'gibier', in Japan

In the last decade, markets of so-called 'gibier' or 'wild game' have been increasingly developed in Japan. For the basic hygienic control of natural products and their safe supply, municipalities and Ministry of Health, Labour and Welfare of Japan have prepared own guidelines and manual for safe processing of wild animal products. Possible pathogens and risk of infectious diseases in consumers of natural animal products, however, have not been surveyed yet at present. In the present review, main focuses are on toxoplasmosis, sarcocystosis, gnathostomiasis, toxocariasis, trichinellosis, paragonimiasis, fasciolosis, dicrocoeliasis, sparganosis mansoni, and scabies. To prevent the disease acquisition, controlled processing and preservation as well as well-done cooking with adequate heating/boiling must be substantiated as in cooking of domestic animal products.
