Compositional analysis of orange (Citrus x sinensis), lime (Citrus x latifolia), avocado (Persea americana) and peach palm fruit (Bactris gasipaes) residues and its potential use in the formulation of a product in the food industry.

El aumento de residuos agroindustriales presenta un problema preocupante debido a la acumulación de desechos que afecta fuertemente a las comunidades aledañas a rellenos sanitarios, y a la contaminación ambiental, de manera que, buscar usos alternativos a estos residuos es imperativo. Por esta razón, la meta de este trabajo es llevar a cabo el análisis químico de residuos de naranja (Citrus x sinensis), limón (Citrus x latifolia), aguacate (Persea americana) y chontaduro (Bactris gasipaes), por medio de los protocolos del NREL con el fin de obtener un análisis próximo, ultimo y composicional de las muestras. En primer lugar, los resultados obtenidos en el análisis próximo demuestran que los cuatro residuos de fruta podrían ser utilizados procesos de producción de energía y bio-combustibles. También se demuestra que existe una relación inversa entre el poder calorífico y el contenido de cenizas. En segundo lugar, los resultados de análisis último dan un acercamiento a lo que es el contenido de carbohidratos y proteína en los residuos. Adicionalmente, remarca la importancia del contenido de azufre y nitrógeno en la aplicación de los residuos para producción de energía debido a la formación de subproductos contaminantes. En tercer lugar, el análisis composicional confirma la importancia del contenido de holocelulosa y lignina en los residuos, y su potencial uso en productos alimenticios de alta fibra. Además, los resultados muestran que el contenido de pectina es significativo solo en residuos de naranja y limón, mientras que una revisión bibliográfica muestra que el contenido de almidón es significativo en residuos de aguacate y chontaduro. Finalmente, en análisis de fitoquímicos preliminares destaca el aguacate debido a su gran cantidad de fitoquímicos en comparación con los otros residuos. Todos los resultados obtenidos permiten evidenciar el potencial de los cuatro residuos como materia prima para el diseño de productos alimentarios.

The increase of agro-industrial residues represents a worrying problem due to the waste accumulation that deeply affects the communities that habit near growing sanitary landfills and contributes to the worsening environmental contamination, consequently, finding alternative uses of agro-industrial residues is imperative. For that reason, the main aim of this work is to carry out a chemical analysis of orange (Citrus x sinensis), lime (Citrus x latifolia), avocado (Persea americana) and peach palm fruit (Bactris gasipaes) residues because of their bioactive potential through the application of the National Renewable Energy Laboratory methodologies and other quantification methods to obtain a proximal, ultimate, and compositional analysis of the samples. Firstly, the obtained results of proximate analysis showed that the four fruit residues could be potentially used in energy and biofuel production process and indicate an inverse relation between the calorific power and the ashes content. Secondly, ultimate analysis data gives an approach to the carbohydrates and protein content of the residues and remark the importance of the nitrogen and sulfur content for energy production applications due to the production of polluting by-products. Thirdly, the compositional analysis confirms the importance of holocellulose and lignin content of the residues and their potential use in high fiber food products, in addition the data found that the pectin content is only significative in orange and lime residues. In contrast, the literature review shows that the starch content is significant just in avocado and peach palm fruit residues. Lastly, the preliminary phytochemicals analysis highlights the avocado residue due to their greatest phytochemicals content in comparison with the rest. All the obtained data allows to notice the potential use of the four residues as raw material for the design of food products.
