ACCEPTANCE OF MEAT FROM CHICKENS FED WITH EISENIA FETIDA (OPISTHOPORA: LUMBRICIDAE): A PRELIMINARY MARKET STUDY IN DAVID, CHIRIQUÍ | ACEPTACIÓN DE CARNE DE POLLOS ALIMENTADOS CON EISENIA FETIDA (OPISTHOPORA: LUMBRICIDAE) : UN ESTUDIO DE MERCADO PRELIMINAR EN DAVID, CHIRIQUÍ

The demand for chicken meat is covered by intensive confinement production systems, highly dependent on concentrated feed, antibiotics and energy; They are also emitters of pollutants that aggravate climate change. Birds are treated for prolonged periods with medications, which can affect the health of consumers. There are organically produced chickens on the market, a healthy alternative, but the sales price is high. The objective of this work was to develop a market study on the acceptance of chicken meat supplementally fed with Eisenia fetida (Savigny, 1826) (Opisthopora: Lumbricidae), a species widely used to obtain humus, being a sustainable protein alternative. To this end, a non-probabilistic sampling was carried out in David, Chiriquí, Panama, randomly choosing 30 people between 18 and 70 years old, who were presented with an electronic survey using Google forms, with eight questions about consumption habits and if they would purchase chicken meat fed with E. fetida. According to the results, the predominant frequency of consumption was three times a week (53.3%). On the other hand, 86.7% are unaware that there are antibiotic residues and 56.7% are unaware of their health risks. Regarding interest in purchasing healthier chicken meat, 76.7% would do so and 56.7% would be willing to pay more for it. Regarding the benefits for birds from ingesting earthworms, 53.3% do not know about them, but 66.7% would consume chicken meat fed with E. fetida. Regarding the place of purchase of worm-fed chicken meat, 50% would prefer to purchase it directly from the poultry farmer. In conclusion, chicken meat fed with E. fetida has market potential in David, because people are more aware of taking care of their health and contributing to the sustainability of livelihoods.

La demanda de carne de pollo es cubierta mediante sistemas productivos intensivos en confinamiento, altamente dependientes de alimentos concentrados, antibióticos y energía; siendo además emisores de contaminantes que agravan el cambio climático. Las aves son tratadas prolongadamente con medicamentos, pudiendo afectar la salud de los consumidores. Existe en el mercado pollos producidos orgánicamente, una alternativa saludable, pero el precio de venta es elevado. Este trabajo tuvo por objetivo desarrollar un estudio de mercado sobre la aceptación de carne de pollo alimentado complementariamente con Eisenia fetida (Savigny, 1826) (Opisthopora: Lumbricidae), especie ampliamente utilizada para la obtención de humus, siendo una alternativa proteínica sostenible. Para ello, se realizó un muestreo no probabilístico en David, Chiriquí, Panamá, escogiéndose al azar a 30 personas entre 18 y 70 años de edad, a quienes se les presentó una encuesta electrónica mediante formularios de Google, con ocho preguntas sobre hábitos de consumo y si adquirirían carne de pollo alimentado con E. fetida. De acuerdo con los resultados, la frecuencia de consumo predominante fue de tres veces por semana (53,3%). Por otro lado, el 86,7% ignora que haya residuos de antibióticos y el 56,7% desconoce sus riegos para la salud. En cuanto al interés por adquirir carne de pollo más saludable, el 76,7% lo haría y 56,7% estaría dispuesto a pagar más por la misma. Referente a los beneficios para las aves por la ingesta de lombrices de tierra, el 53,3% desconoce sobre los mismos, pero el 66,7% consumiría carne de pollo alimentado con E. fetida. En cuanto al lugar de compra de carne de pollo alimentado con lombrices, el 50% preferiría adquirirla directamente del avicultor. En conclusión, la carne de pollo alimentado con E. fetida tiene potencial de mercado en David, porque las personas son más conscientes de cuidar su salud y contribuir con la sostenibilidad de los medios de vida.
