Leguminous plants have great economic and ecological significance in agriculture. As an essential source of food, they have played an important role throughout evolution in social development and in the development of human intellectuality. The importance of leguminous crops lies in the very high protein content of the grain, which is two to three times higher than the protein content of cereals. The grains of leguminous crops are very successful in balancing such components as protein, starch, sugar, vitamins and the chemical elements strictly necessary for the normal vital activity of the human organism.
