Fruits of 15 species of Prunus L. genus, 15 blackthorn (P. spinosa L.) genotypes and 7 cornelian cherry (Cornus mas L.) genotypes were phytochemically characterised and their biological activities were assessed. By HPLC analysis phenolic profile was determined for all examined fruits and iridoid profile for cornelian cherry fruits. Bioactive potential was estimated by antioxidant capacity (Folin-Ciocâlteu, FRAP and DPPH tests), antiproliferative activity towards HT‑29 cells (colon adenocarcinoma), ‑amylase, ‑glucosidase, and dipeptidyl peptidase III (DPP III) inhibitory activities. Statistical analysis methods – cluster, correlations and principal component analysis (PCA) highlighted genetically similar species and compounds which contributed mostly to certain biological activities. Molecular docking analysis pointed out the best inhibitors of ‑amylase, ‑glucosidase, and DPP III enzymes. The extracts of blackthorn and cornelian cherry fruits, and sour cherry pomace extract were further encapsulated in halloysite, maltodextrin, halloysite-maltodextrin composite and β‑cyclodextrin. Physicochemical caracterisation of encapsulates, encapsulation efficacy, antiproliferative effects on human cell lines MCF7 (breast adenocarcinoma), HT‑29 (colon adenocarcinoma) and MRC‑5 (fetal lung fibroblasts), and controlled release of bioactive molecules were assesed.
