Development of technology for the production of sausages with shiitake mushrooms and camelina oil | Разработка технологии производства сосисок с грибами шиитаке и рыжиковым маслом

The purpose of the research is to develop a technology to produce sausages containing shiitake mushrooms and camelina oil that will expand the range of functional sausage products in meat processing plants. To determine the acceptable level of meat substitution in the formulation, the effect of mushroom raw materials on the quality of finished products was studied. Using a cutter, model minced meat (beef and mid-fat pork) was prepared. The meat was replaced with 20, 25, 30, 35% of boiled shiitake mushrooms of the weight of the main raw material. Minced meat containing 20% mushrooms had optimal characteristics. On this basis, samples containing 5, 10, or 15% of camelina oil by weight of meat components were prepared. According to the results of the organoleptic evaluation, a substitution rate of 5% was found to be the most appropriate. A technological scheme for the production of sausages with shiitake mushrooms and camelina oil has been developed. Mushrooms are suggested to be soaked, boiled, and crushed after draining water and cooling. It is recommended to chop meat at a temperature of no more than 12 ºC, to add prepared mushrooms, camelina oil, liquid eggs, cream, powdered milk, water-ice mixture, and to apply nitrite salt, phosphates, spices at the final stage. The experimental sausage samples corresponded to the requirements of the current standard in terms of physicochemical parameters. Sausages in a polyamide casing were stored at a temperature between 0 and 6 ºC and an air humidity of 75% for 10 days. No pathogenic microorganisms were found in the product after this period. The introduction of mushrooms into the sausage recipe makes it possible to reduce production costs without loss of quality. Due to camelina oil, which exhibits antibiotic properties, it is possible to increase the shelf life of the product. The original appearance of the sausages will be attractive to consumers.

Цель исследования – разработка технологии производства сосисок с грибами шиитаке и рыжиковым маслом для расширения ассортимента функциональных колбасных изделий на мясоперерабатывающих предприятиях. Для определения допустимого уровня замены мяса в рецептуре изучили влияние грибного сырья на качество готовых изделий. С помощью куттера готовили модельные фарши из говядины и свинины полужирной. Мясо заменяли отваренными грибами шиитаке на 20, 25, 30, 35% от массы основного сырья. Оптимальные характеристики имел фарш, содержащий 20% грибов. На его основе готовили образцы, содержащие 5, 10 или 15% рыжикового масла от массы мясных компонентов. По результатам органолептической оценки наиболее подходящей признана дозировка 5%. Разработана технологическая схема производства сосисок с грибами шиитаке и рыжиковым маслом. Грибы предлагается замачивать, отваривать, измельчать после стекания воды и охлаждения. Фарш рекомендовано куттеровать при температуре не выше 12 ºС, добавлять в него подготовленные грибы, рыжиковое масло, меланж, сливки, сухое молоко, водо-ледяную смесь, а на финальной стадии - нитритную соль, фосфаты, специи. Изготовленные образцы экспериментальных сосисок по физико-химическим показателям соответствовали требованиям действующего стандарта. Сосиски в полиамидной оболочке хранили при температуре от 0 до 6 ºС и влажности воздуха 75% в течение 10 сут. Патогенных микроорганизмов по истечении этого срока в продукте не обнаружено. Введение грибов в рецептуру сосисок позволяет снизить их себестоимость без потери качественных показателей. За счет рыжикового масла, проявляющего антибиотические свойства, можно увеличить срок хранения продукта. Оригинальный внешний вид сосисок будет привлекательным для потребителей.
