Variabilidad de nutrientes y β -caroteno en la harina de Bactris gasipaes Kunth (pijuayo) obtenidos por diferentes pre tratamientos térmicos

The research work consisted of evaluating the content of β-carotenes and nutrients of a variety of Bactris gasipaes Kunth (pijuayo), in which a comparative descriptive study was developed since during the development of the project we subjected the raw material to two pretreatments thermal cooking and steam. For the transformation of the raw material the flour we used the drying method which was at a temperature of 55°C to 65°C for 8 hours. The β carotene content was measured through UV-VIS spectrophotometry at 456nm and compared with the standar. The results were calculated through the methodology applying the Lambert-Beer law. The results indicate that the raw pijuayo flour has a higher content of β-carotene, followed by the steamed pijuayo flour and finally the cooked pijuayo. While in terms of nutrient content, the highest percentage was steamed pijuayo flour, followed by raw pijuayo flour and lastly cooked pijuayo flour. Regarding the content of macro minerals. The minerals with the highest concentration in steamed pijuayo flour are: calcium, iron, magnesium. While in raw pijuayo flour the one with the highest concentration is phosphorous. In the micro minerals, cooper has a higher concentration in raw peach palm flour, manganese in cooked peach palm flour and finally zinc has a higher concentration in the steamed peach palm flour.

El trabajo de investigación consistió en evaluar el contenido de β-caroteno y nutrientes de una variedad de Bactris gasipaes Kunth (pijuayo), en el cual se desarrolló un estudio descriptivo comparativo ya que durante el desarrollo del proyecto sometimos la materia prima a dos pre tratamientos térmicos por cocción y a vapor. Para la transformación de la materia prima a harina utilizamos el método de secado el cual fue a una temperatura de 55°C a 65°C durante 8 horas. El contenido de β-caroteno fue medido a través de espectrofotometría de UV-Vis, a 456 nm y comparando con el estándar. Los resultados fueron calculados a través de la metodología aplicando la ley de Lambert - Beer. Los resultados indican que la harina de pijuayo crudo tiene mayor contenido de β-caroteno seguido de la harina de pijuayo a vapor y por último el pijuayo por cocción. Mientras que en el contenido de nutrientes el mayor porcentaje fue de la harina de pijuayo a vapor, seguido de la harina de pijuayo crudo y por último la harina de pijuayo por cocción. En cuanto al contenido de macro minerales. Los minerales con mayor concentración en la harina de pijuayo a vapor son: el calcio, el hierro y el magnesio. Mientras que en la harina de pijuayo crudo el que tiene mayor concentración es el fosforo. En los micro minerales el cobre tiene mayor concentración en la harina de pijuayo crudo, el manganeso en la harina de pijuayo cocido y por último el zinc tiene mayor concentración en la harina de pijuayo a vapor.
