Recently, agro-industrial waste from the vegetable oil industry, usually associated with environmental problems, has been recognized as an important source of nutraceuticals and valuable compounds. The processing of oilseeds, either by solvent extraction or mechanical pressing, generates a significant amount of waste, including hulls, seeds and seed coatings. Hemp oil, due to its unique composition, is considered an extremely valuable product used in the food, pharmaceutical and cosmetic industries, which justifies the processing of industrial hemp (Cannabis sativa L.). Research has found significant amounts of protein, dietary fiber and other bioactive compounds in hemp oil, providing significant benefits to human health. The functional properties of hemp seeds derive from their high nutritional value and the presence of various bioactive compounds, such as phenolic compounds with antioxidant and anti-inflammatory effects, bioactive peptides, and two of the main groups of cannabinoids: tetrahydrocannabinol and cannabidiol. Also, seed hull was identified as a valuable by-product suitable for valorization. After extraction of the oil, the oilcake, which contains beneficial nutrients, is used in the development of new multifunctional products and is widely promoted as a nutritional product.
