Influence of phytoncides on the storage life of food products | Влияние фитонцидов на сроки хранения пищевых продуктов

English. Phytoncides are a complex of volatile compounds of different chemical nature released by plants. The objective of the work is to evaluate the effect of phytoncides on shelf life extension of perishable foods. White bread, cooked sausage, fresh river fish, and cheese were selected for experiments. Garlic bulbs, ginger root vegetables, pine needles and bay leaf were selected as sources of phytoncides. The product itself or the product and the source of phytoncides were placed in tightly sealed glass jars that were stored at room temperature (about 25 deg. C). Signs of spoilage on the surface of control cooked sausage sample stored without phytoncides appeared already on the 2nd day, on other samples – on the 4th day. The control sample of white bread began to spoil on the 4th day, other samples being in phytoncides vapors - only on the 6th day. The control sample of river fish began to spoil and emit an unpleasant odor by the end of day 1; samples in vapors of phytoncides of garlic, ginger, and pine needles began to spoil on day 3, and the sample with bay leaf phytoncides began to spoil only on day 4. Spoilage consisted of the appearance of a rotten smell and the release of mucus, there was no mold. It is concluded that the permissible shelf life of products at room temperature in the presence of phytoncides increases 2-3 times. Ginger was the least effective during storage of the products investigated. The most effective were phytoncides released by pine needles and bay leaf. The phytoncidal properties of the studied plant objects may be in demand during long-term transportation of food or in case of an emergency.

Russian. Фитонциды – комплекс летучих соединений разной химической природы, выделяемых растениями. Цель работы – оценка влияния фитонцидов на продление сроков годности скоропортящихся продуктов питания. Для исследования были выбраны белый хлеб, колбаса вареная, свежая речная рыба, сыр. В качестве обладающих фитонцидными свойствами были выбраны луковицы чеснока, корнеплоды имбиря, хвоя сосны и лавровый лист. Продукт сам по себе или продукт и источник фитонцидов помещали в плотно закрываемые стеклянные банки, которые хранили при комнатной температуре (около 25 ºС). На контрольном образце вареной колбасы (хранящемся без фитонцидов) признаки порчи появились уже на 2-е сут, на других образцах – на 4-е сут. Контрольный образец белого хлеба начал портиться на 4-е сут, другие образцы, находящиеся в парах фитонцидов – только на 6-е сут. Контрольный образец речной рыбы начал портиться (издавать неприятный запах) уже к концу 1-х сут; образцы в парах фитонцидов чеснока, имбиря, хвои сосны начали портиться на 3-е сут, а образец с фитонцидами лаврового листа – только на 4-е сут. Порча заключалась в появлении тухлого запаха и выделении слизи, плесени не было. Сделан вывод, что допустимый срок хранения продуктов при комнатной температуре в присутствии фитонцидов увеличивается в 2–3 раза. Наименее эффективным при хранении исследуемых продуктов был имбирь. Наиболее эффективными оказались фитонциды, выделяемые хвоей сосны и лавровым листом. Фитонцидные свойства изученных растительных объектов могут быть востребованы при длительной транспортировке продуктов питания или в случае чрезвычайной ситуации.
