Evolution of potato starch production in Russia | Эволюция производства картофельного крахмала в России

English. The presented study analyzes publications considering the development of potato starch production in the period from the 19th century to the present day. The purpose of the review is to study the genesis of the development of domestic industrial production of potato starch based on the analysis of transformation and the results of the evolutionary development of the Russian industry. The paper presents information on potato processing volumes and equipment used in the middle of the 19th century, before the First World War, after the 1917 Revolution, during the first five-year plans, in the post-war period of 1945 and up to the present. These data make it possible to assess industry development trends and identify ways to improve product quality and production efficiency. In 1950, the starch industry, in terms of its production capacity and production volumes, almost reached the level of 1940. The work on the restoration and modernization of enterprises in order to increase their production capacities was accompanied by the introduction of advanced technologies and technical solutions. Since the early 1990s, as a result of the abolition of government subsidies for potatoes intended for industrial processing, as well as due to lower consumer demand and uncontrolled imports of cheaper starch products, starch production in the country has declined significantly, and the starch industry has been in critical condition. The revival of potato starch production in the state involves a comprehensive analysis of existing potato processing methods in the context of interaction with producers in order to develop and implement agricultural and food technology. The prospects for the development of the potato starch industry seem very promising in the light of the introduction of sustainable methods and technological innovations. This will not only meet the growing demands of the market, but also ensure that products meet new quality standards.

Russian. Проведен анализ публикаций, посвященных развитию производства картофельного крахмала в период с XIX века до наших дней. Цель обзора - изучение генезиса развития отечественного промышленного производства картофельного крахмала на основе анализа трансформации и результатов эволюционного развития российской промышленности. Представлены сведения об объемах переработки картофеля и используемом оборудовании с середины 19 века, до Первой мировой войны, после революции 1917 г., в период первых пятилеток, в послевоенный период 1945 г. и до настоящего времени. Эти данные позволяют оценить тенденции развития отрасли и определить пути повышения качества продукции и эффективности производства. В 1950 г. крахмалопаточная промышленность по своим производственным мощностям и объемам производства практически достигла уровня 1940 г. Работы по восстановлению и модернизации предприятий с целью увеличения их производственных мощностей сопровождались внедрением передовых технологий и технических решений. С начала 1990-х гг. в результате отмены государственных субсидий на картофель, предназначенный для промышленной переработки, а также вследствие снижения спроса со стороны потребителей и неконтролируемого импорта более дешевых крахмалопродуктов, объемы производства крахмала в стране существенно сократились, и крахмалопаточная отрасль оказалась в критическом состоянии. Возрождение производства картофельного крахмала в государстве предполагает комплексный анализ существующих методов переработки картофеля в контексте взаимодействия с производителями с целью разработки и внедрения аграрно-пищевой технологии. Перспективы развития отрасли, связанной с производством картофельного крахмала, представляются весьма многообещающими в свете внедрения устойчивых методов и технологических инноваций. Это позволит не только удовлетворить растущие запросы рынка, но и обеспечить соответствие продукции новым стандартам качества.
