Synergism of phytochemicals of the plant food matrix: mechanisms, functionality | Синергизм фитохимических веществ растительной пищевой матрицы: механизмы, функциональность

English. Bioactive phytochemical compounds (PCs) of the plant food matrix (FM) as the base of functional foods play a vital role in the prevention of chronic diseases and human immunity enhancing. The main problem in the development of bioactive food ingredients is their limited bioavailability. The principle of synergism of individual biologically active substances (BAS) is an effective way to increase bioaccessibility and bioavailability. The article presents an overview of studies of various combinations of phytonutrients, the joint action of which causes a synergistic effect. The value of the concept of synergism of PCs is considered in close connection with their pharmacological properties. Attention is paid to the synergistic potential of biologically active complexes in the prevention and treatment of inflammatory, lipid-lowering, neurodegenerative diseases, and effects on microorganisms. The mechanisms of interaction of PCs causing the following synergistic effects are considered: increased bioaccessibility of the substance; multitasking of the resulting combinations due to the functional properties of their components; ensuring bacterial resistance; elimination or neutralization of adverse effects on the functional ingredient during digestion in the human gastrointestinal tract (GIT). A lot of scientific papers revealed researches the most bioactive agents of plant FM that have poor digestibility or instability when passing through the GIT. They are polyphenolic compounds: catechin, quercetin, rutin, resveratrol, gallic, caffeic acids. Their bioavailability can be increased due to combining with some carotenoids (β-carotene, lycopene, lutein), vitamins (C, E), alkaloids (piperine, capsaicin). The functionality of such combinations turned out to be higher in comparison with mononutrient bioactivity. The article touches upon a review of exploratory studies, where such functional ingredients as polysaccharides, proteins, lipids are used as possible PCs causing synergistic effects, which in turn act as transport carriers for BAS that are unstable during digestion.

Биоактивные фитохимические соединения (ФС) растительной пищевой матрицы (ПМ) как фундамента функциональных продуктов питания важны для профилактики хронических заболеваний и повышения иммунитета организма человека. Проблемой в разработке биоактивных пищевых ингредиентов является ограниченная биодоступность большинства биологически активных веществ (БАВ); решение: применение принципа синергизма отдельных БАВ. Представлен обзор исследований различных комбинаций фитонутриентов, совместное действие которых вызывает синергический эффект. Ценность концепции синергизма ФС рассмотрена во взаимосвязи с их фармакологическими свойствами. Описан синергический потенциал биоактивных комплексов в профилактике и лечении воспалительных, гиполипидемических, нейродегенеративных заболеваний, воздействия на микроорганизмы. Рассмотрены механизмы взаимодействия ФС, вызывающих синергические эффекты: повышение биодоступности вещества; многозадачность образующихся комбинаций за счет функциональных свойств их компонентов; обеспечение резистентности бактерий; устранение или нейтрализация неблагоприятных воздействий на функциональный ингредиент при переваривании в желудочно-кишечном тракте (ЖКТ). Большинство выявленных научных работ было посвящёно исследованиям наиболее биоактивных агентов растительной ПМ, которые плохо усваиваются или не стабильны при прохождении через ЖКТ. Это полифенольных соединения: катехин, ресвератрол, галловая кислота. Их биодоступность можно повысить путём сочетания с некоторыми каротиноидами (β-каротин, ликопин), витаминами (С, Е), алкалоидами (пиперин, капсаицин). Функциональность подобных комбинаций оказывалась выше в сравнении с уровнем биоактивности мононутриентов. Затронут обзор поисковых исследований ФС, где в качестве возможных синергических компонентов используются функциональные ингредиенты - полисахариды, белки, липиды - выступающие в роли носителей для нестабильных при переваривании БАВ.
