Research developments of electronic nose and its application in processing of agriculture products

The study on electronic nose was initiated about twenty years ago. In recent years, electronic nose as a new higher technology, was applied in many domains including food industry, chemical industry, military industry to meet the demand of the industrial automation, mathematician, and normalization. The result of application was quite effectual, and its development had high potential. So increasingly more researches around the world have been focused on electronic nose, and the area of its research and application are steadily extended. An electronic nose consists of three parts: the gas sensor array, the signal preparation system and the pattern recognition system. Demarcated as distinct research domains, the later two parts can be amalgamated as the software part of electronic nose, and the first part as the hardware part. In this paper, we adopt the second kind of demarcate ways, and review the research progress on each part of electronic nose in the latest years, and the trend of research in the future. On view of the ever layer range and greater depth of exploitation of electronic nose, the present situation and prospect of applying this technique to processing of agricultural products both in china and abroad are reviewed.
